Grandmother's traditional dessert: the floating island

When I was a child, it was one of the desserts that I preferred to taste on Sunday lunch with the family: the floating islands, also called snow eggs.


Grandmother's recipe if there is one, I like to find this old-fashioned dessert, after all quite simple to prepare, and oh how much better than the industrial version that we find today.


Eggs, milk, sugar, vanilla, you don't need many ingredients to prepare these floating islands. The main difficulty is to successfully cook the custard, and then the caramel.


 

1 - Ingredients for 4 people:

50 cl custard

5 egg whites

150g caster sugar

1 pinch of salt


For the caramel:

150g caster sugar

1/2 lemon juice

 

2 - Préparation :

Prepare the custard as indicated in the recipe, then take care of the egg whites.


Pour the egg whites into the bowl of the food processor, add the pinch of salt, then start whisking at low speed to obtain a foam. At this time, start adding the powdered sugar in 3 times, increasing the speed. When the whites are tight, boil a pot of water.




Once the water is simmering, drop quenelles of egg whites with a tablespoon or a ladle. Cook for 1-2 minutes, then gently flip and repeat. Take out each dumpling, place it on a clean tea towel.



When the custard is cold, pour it into your cups, then place the egg whites on top.


Prepare a caramel: pour the sugar into a saucepan, sprinkle with the lemon juice, and heat until you get a nice golden color.



Gently pour the caramel over your floating islands.

Serve immediately.


If you want to prepare your floating islands in advance, only add the caramel at the last moment, as it tends to soften in the fridge.
